Sometimes you don’t think: you see a heavily discounted tray of chicken that still seems fresh and you instantly put it in your grocery basket. But then you get home and realize that you hadn’t planned for this random impulse and it doesn’t fit into any meal plan. Its biological clock is ticking and you can’t wait for the next grocery shop to buy more ingredients. Now what?
This stew is what happened. By using random pantry staples, I had a flavourful, easy, and quick stew that goes well with everything: noodles, tteokbokki, rice, bulgur, crusty bread. This is an entirely low effort dish with maximum flavour. A quick simmer and it’s done. Concerned with the spiciness? Reduce the gochujang and dried peppers. Missing an ingredient (or have a few extras?) toss ’em in. No regrets – like finding last-call food at the supermarket.
Easy pantry-friendly chicken & kimchi lazy stew

2 cups water
1/2 cup cut kimchi
3 tbsp gochujang (or to taste)
1 tbsp soy sauce
1 tsp sugar
1 garlic clove, minced
3 dried whole peppers (Korean or Tien Tsin, or to taste)
1 onion, chopped
2 white potatoes, peeled and cut into 1″ x 1″ pieces
A tray of bone-in chicken pieces (approximately .8 kg/1.75 lb of chicken, 8 drumsticks)
3 green onion stalks, cut to 1″ length, white and green parts
Salt & pepper, to taste
Directions
- In a large saucepan, mix water, kimchi, gochujang, soy sauce, whole peppers, garlic and onion together. Bring to boil.
- Add chicken pieces to stew and lower the temperature to simmer for 20 minutes, or until potatoes are almost cooked through. Add onion stalks and continue to simmer for another 10 minutes.
- Season with salt and pepper to taste and serve.
